Your GAMMS Sauces Questions Answered

What is the shelf life of GAMMS products?

We had our products tested at NCSU Extension Department of Food, Bioprocessing and Nutrition Science.  They state that our product has a shelf life of 2 years for an unopened bottle of Marinade or Grilling Sauce.  Once the bottle is open it is OK for up to 6 months in the refrigerator. (But it shouldn’t last that long since it is so good on everything!)

Is GAMMS gluten free?

Our Cece’s Dry Rub and Sweet Rub are Gluten Free.  The Marinade and Grilling Sauce are NOT.  We are testing a Gluten Free version but it is not available at this time.

Are your flavors spicy?

Our Marinade and Grilling Sauce are spicy flavorful NOT spicy hot.  Our products actually have a sweet flavor full of spices. We DO have a HOT version upon request.  It is the same recipe with Ghost Pepper added.  This product is made with the Marinade and has the same sweet start followed by heat.

Our Rubs are full of many spices. Again flavorful and zesty but not hot.  Of course the more you add  to your dish the hotter it could get.

How do you ship?

We use USPS. (United States Postal Service). We ship all across the United States with NO PROBLEM!

What is a dry rub?

A rub is a combination of spices and/or herbs that is added to foods before cooking. Rubs are most often used in barbecue and grilling because of their ability to stick to meats when grilled or smoked. But using rubs in baking or roasting gives flavor to whatever you are cooking.

What is the difference between a sweet rub and a dry rub?

Our Cece’s Dry Rub and Sweet Rub are very similar.  We used our dry rub as the base of the sweet rub.  We added brown sugar to help take a little of the saltiness from the recipe. IT is NOT overly sweet.  Both products can be used interchangeably. The only issue is that the sugar could caramelize and burn if cooking at a high heat. Low and slow is a great way to use the rubs.

What is the difference between a marinade and a grilling sauce?

Our Marinade and Grilling Sauce is the exact same recipe except that we added a thickening agent to the Grilling Sauce.  The Marinade is thinner allowing the liquid to penetrate the meat better as when making jerky. The Grilling Sauce is thicker and when used on the grill will be more the consistency of a BBQ sauce and will “stick” to the outside better and not run off the meat.  Again these products can be used interchangeably with any meal, just the “thickness” is different NOT the taste or flavor.

Do you stock any other products?

At this time we have Cece’s Dry Rub  and Cece’s Sweet Rub in the Medium and XL sizes. The Marinade and Grilling Sauce is in the 12 ounce and ½ gallon sizes. Additional products are in trial stages and will be announced as they are released.

Created in 1985, the program is designed to promote top-quality fresh produce, processed food items, fiber and nursery products that are grown or manufactured in North Carolina. There are currently over 1,300 participating companies producing thousands of food and nursery products.

The major emphasis of the program is to heighten awareness and availability and increase sales of North Carolina agricultural products. Members in this directory are indicated with the logo by their company name. The Goodness Grows in North Carolina logo is a symbol of outstanding quality and is utilized by many grocery and foodservice outlets statewide.
